Hemlocks Confections is a small business focused on specialty cakes and chocolates. Being a small business Hemlocks can give personalized service that is not always available from larger operations. Hemlocks is owned by LauraLee Worthen, with her husband Greg serving as Pastry Chef. Both have extensive culinary backgrounds and each brings a unique strength to Hemlocks. Since starting out, the business motto of "Flavor First"Â has served well, as the vast majority of orders received are by word of mouth. Professionalism, love of the baking trade, and a thorough understanding of baking, are some of the strengths that have given Hemlocks its present reputation.
Greg graduated at the top of his class from The Culinary Institute of America. After school he went to work at the Balsams Grand Resort Hotel in Dixville Notch, N.H. under certified Master Baker Steve James. Greg soon rose to the level of Assistant Pastry Chef , and also became a Certified Working Pastry Chef through the American Culinary Federation. It was during his stay at the Balsams that he earned both gold and silver medals in pastry competitions. As well as working at the Balsams, Greg has worked for the Ritz Carlton, The Wianno Club, and the prestigious Everglades Club in Palm Beach, Florida. Having trained with Pastry Chefs from over 5 countries has also given Greg a unique perspective and approach to his chosen craft. Recently Greg has taught Baking and Advanced Pastry Arts at the collegiate level, as an adjunct professor.
LauraLee is a graduate of the culinary arts program at Southern Maine Technical College. After graduating LauraLee also worked at the Balsams Hotel in both the culinary and baking departments. She has taken continuing education classes on cake decorating at the Culinary Institute of America. LauraLee has also worked at other fine establishments such as Sea Pines, Hilton Head, and The Everglades Club in Palm Beach.
Unlike many cake decorators both Greg and LauraLee first trained as student and apprentice bakers. They both graduated to cake decorating and the finer aspects of pastry work. This has given them a solid foundation on which to provide a well-made, flavorful product. Hemlocks is not a full service bakery allowing focus on its chosen niche of excellent occasion cakes and artisan chocolates.
